Grateful, November 6
Nov. 6th, 2011 07:19 pmOriginally, I was going to thank Chris for reminding me not to take the Seahawk's losses so personally/seriously. She's right and I took a deep breath and got over it.
Then AJ and I made dinner and we ROCKED it!
All veggies (except for the bacon, 'cause EVERYTHING goes with bacon) and ridiculously yummy. A mess of carrots and a bit of parsnip in a pot 'til soft with a big ole eggplant (skinned for once) tossed in at the last minute. Ground that down in the food processor with our fave Greek seasoning salt (that all that is holy for Cavendar's), pepper, basil, some plain yogurt (thank you Lorre!) and the last few mini heritage tomatoes from Trader Joe's. This is like nothing I've-- err, we-- have ever cooked and it's AMAZING. Then we sauteed down spinach, broccoli, cauliflower and zucchini with similar spices and tossed the mash and bacon over it.
Did I mention it was yummy?
